Smoked maple salmon recipe

And if you are wandering how to do your smoked salmon at home, our chefs have decided to share their recipe with you...

To do it you will need : a kitchen smokehouse.

Ingredients : 

  • Dry brine : salt, pepper, spices mix ➜ 35g for each kg of salmon
  • Fish and smoking : 1 salmon filet with skin, 200ml of maple syrup, maple wood to smoke for 6 to 8 hours

Preparation :

  1. Put all the ingredients for the dry brine in a bowl and mix it
  2. Rince and dry the salmon with napkins
  3. In a plate, put a bit of dry brine and add the salmon on it 
  4. Put dry brine on the top to cover the salmon and the skin
  5. Cover the plate wtih plastic wrap and put it in the fridge for the night

2 hours before the smoking : 

  1. Clean the salmon filet with cold water and dry it with napkins
  2. Oil the grates and put the filet on it
  3. Leave it in the fridge for 2 hours or more until the flesh is sticky when you touch it

Smoking :

  1. Start the kitchen smokehouse with the maple wood inside 
  2. Put the fish inside and let it smoke for 6 to 8 hours
  3. Let it cold
  4. Daub the salmon with maple syrup
  5. Enjoy !
